Sesame is one of most ancient crops known to man. Traces of it have been found in remains from before 3500 years B.C. It is rich in protein and contains one of the highest levels of antioxidants among oils – sesamin, sesamolin and sesame oil. Raw tahini represents grounded sesame seeds. Used in African, Greek, Turkish and Arab food, it is a main ingredient in hummus and halva. Extremely delicious and healthy, it’s important to remember that sesame should be consumed grounded, otherwise the hulls of the seeds prevent you from fully absorbing its nutrients.
