Strawberry Meringue

In order to avoid sugar it is best to prepare the meringues with stevia. And the time-saving version is on top of dices of fresh strawberries to crush some meringues and to place on top a generous scoop of Coppa della Maga Strawberry. A sure bliss…


For 4 portions:

1. 12 diced strawberries or 300 g wild strawberries

2 teaspoons of strawberry or fruit liquor

3. stevia (equivalent to 2 teaspoons of sugar)

4. 1 container (500 ml) Coppa della Maga Strawberry (or Classic Vanilla)

For the meringues:

1. 4 egg whites

2. juice of ½ lemon

3. stevia (equivalent to 100 g sugar)

4. a handful of mashed strawberries


1. Dice the strawberries, pour over the liquor with the stevia and put them in the fridge

2. Whisk the egg whites. Slowly add the lemon juice, the stevia and gently fold in the handful of mashed strawberries. Pour the mixture into a small baking tray and bake in a low heat (90 С) for 75 minutes until the meringue dough gets pale pink and hardens. Turn off the heat and leave the tray in until the oven cools down

3. Serve the strawberries in four cups. On top of them crush some meringue dough and add a scoop of Coppa della Maga Strawberry or Vanilla Classic.
